Here's two recipes I'm using for turkey leftovers. Thought I'd share. ;) By the way, this year was the first year I made a turkey. yay! :)
Tortilla Soup
2 cans diced tomatoes (14.5 oz)
3 cups chicken broth
1-1/2lbs diced cooked turkey (I think this is 3-5/8 cups if I figured it right. lol)
2 tsp chili powder
1 package red beans and rice (Zatarain's, it's with the boxed rice)
shredded monterey jack cheese
tortilla chips
Combine undrained tomatoes and chicken broth in large sauce pan. Boil; add chicken seasoned with chili powder. Reduce heat; cook 7 mins. Add in prepared beans and rice; heat through. Spoon into bowls. Top with cheese and chips.
Smoky Tacos
1 can diced tomatoes (28oz)
1 small onion
2 garlic cloves
1 t chipotle chili adobo sauce from can of chipotle chilies, or more to taste.
1 T vegetable or canola oil
2 cups shredded cheese
1 package taco shells
shredded monterey jack cheese
sour cream, tomatoes, lettuce, onion (whatever you like for toppings)
Preheat oven to 400. Puree tomatoes, onion, garlic, chili sauce and oil in blender until smooth.
Add tomato sauce to medium pan on stove and bring to simmer. Cook until slightly thickened, 5-7 mins. Add salt and pepper. Add chicken and heat through.
Fill taco shells with mixture and top with shredded cheese. Place in a baking dish and bake for 8-10 mins or until cheese melts. Add toppings and enjoy!
